OYSTER RAGOUT

3 dozen large Oysters (shucked and meat chopped) Retain shells

Cracker crumbs to match (meat)

juice of 1 Lemon

Salt & Pepper (to taste)

2 Egg Yokes

2 hard-boiled Eggs (mashed)

1 small Onion (grated)

1 lump Butter

 

Mix together; chopped oysters. rolled cracker crumbs, lemon

juice, mashed eggs, grated onion, melted butter and salt &

pepper.

Bake in a pan @ 300 for 1/2 hour.. Put into shells and sprinkle

with more cracker crumbs and add some melted butter.. Return to

oven and brown and serve!
