COCONUT CUPCAKES WITH COCONUT WHITE CHOCOLATE  FROSTING

CUPCAKES:
2 1/4 cups flour
2 tsp baking powder
1/2 tsp  salt
1/2 cup sweetened flaked coconut
3/4 cup unsalted butter,  softened
1 1/2 cup sugar
3 large eggs
1/2 tsp coconut extract or  vanilla extract
3/4 cup light coconut milk
COCONUT WHITE CHOCOLATE  FROSTING:
1 cup white chocolate baking chips
1/2 cup unsalted butter,  softened
8 oz brick cream cheese, softened
1/2 tsp coconut extract
2  1/2 cups powdered sugar
GARNISH: Sweetened flaked coconut,  toasted

(Heat oven to 350 degrees). Line 24 muffin cups with paper  liners. Whisk 
flour, baking powder and salt in a bowl, stir in coconut.
*Beat  butter and sugar in a bowl until creamed. Add eggs, beat until 
blended. Beat in  coconut extract. Alternately beat in flour mixture and 
coconut 
milk until  blended.
*Spoon 1/4 cup batter into each muffin cup. (Bake 23 min.) or until  done. 
Cool 10 min. remove cupcakes from pan to cool  completely.
*(FROSTING)-*(FROSTING)-<WBR>--Melt white chips in a glass bowl in 
microwave  as package directs. Beat butter, cream cheese and coconut extract in 
a 
bowl  until creamed and blended. Beat in melted white chocolate until blended. 
Beat in 
*Spread 2 tbs frosting onto each cupcake. (Sprinkle tops  with toasted 
coconut, then serve). 
MAKES 24  CUPCAKES...
