President Johnson's Chewy Macaroons

2 egg whites at room temperature
Pinch of salt
1/2 c. sugar
1 c. sweetened shredded coconut
1/2 tsp vanilla extract

Preheat oven to dg325.  Lightly grease several baking sheets.

Beat egg whites with salt until stiff.

Gradually beat in sugar until stiff, shiny peaks form.  Fold in
coconut and vanilla.

Drop by teaspoonfuls onto prepared sheets leaving 2 inches between
each mound for spreading.

Bake on middle shelf of preheated oven for 20 minutes or until golden
brown.  Do not overbake.

Cool before serving.  Store in airtight container in refrigerator.
Remove from refrigerator an hour before serving to allow cookies to
come to room temperature.
