CAJUN PINEAPPLE CAKE

2 cups flour
1 20 oz can crushed pineapple  with juice
1 1/2 cups sugar
2 eggs
1 1/2 teaspoons baking soda
1/8  teaspoon salt

Mix all ingredients by hand. Put in greased & floured  13 x 9 " pan.
Bake at 300 degrees for 40 to 45 minutes.

Icing to be  put on when cake is HOT

Icing
1/2 cup butter 
3/4 cup sugar
1  cup chopped pecans
5 1/3 ounces evaporated milk
1 teaspoon vanilla
1  cup flaked coconut

Mix butter, milk & sugar in saucepan. Bring to a  boil. Boil 5 minutes.
Remove from heat & add vanilla, pecans &  coconut. Pour over hot cake.
Best served warm.
