Chicken Fried Steak

4 Large Cubed steaks  
1 egg 
2 tablespoons of Texas Pete Hot Sauce 
1 cup of self-rising  flour 
1/2 teaspoon of salt 
1/4 teaspoon of pepper 
1/2 teaspoon of  onion powder 
1/2 teaspoon of garlic powder 
Pinch of cayenne pepper  (optional) 
1/4 cup of water 
1/4 to 1/2 cup of shortening for frying
For the Gravy: 
1/4 cup of shortening 
1/4 cup of flour 
2 to 3 cups of milk  
salt and pepper

You'll need  to 2 pie plates.  
In one plate, mix together the flour, onion powder, garlic powder,  cayenne 
pepper, salt and pepper. Set Aside.  
In the other pie plate, mix the egg and Texas Pete Hot Sauce  
Cover the steak with plastic wrap and pound out thin to about 1/4  inch.  
Place the steak into the egg mixture and then into the flour mixture.  
Press it in the flour to thoroughly coat.  
Heat shortening in a large skillet (cast iron is the best) over  medium 
high heat. Place steaks in frying pan.  
Fry until the first side is a nice golden brown. Turn over, fry for 1  to 2 
minutes. Add the 1/4 cup of water. Cover, cook for about 10 minutes. Remove 
 lid and continue cooking until the second side is brown. Remove from pan 
and  drain on paper towels.  
Turn down the heat and add the shortening and flour to the pan and  cook 
for a few minutes until the flour starts to brown.  




Add the milk, stirring constantly until thick and bubbly. Add salt  and 
pepper to taste. Plate up your steak and pour that wonderful gravy over it.  
I'm sure you'll agree that this is the best you've ever  made!
