Wyoming Baked Beans
1 pound great northern beans overnight in cold water 1 cup white onion chopped 4 slices bacon diced 2 tablespoons sugar 1 tablespoon dry mustard 1/2 teaspoon cayenne pepper 2/3 cup molasses 2 tablespoons cider vinegar 1&1/2 cups tomato juice Drain beans and place in large saucepan then add fresh water to cover beans. Bring water to boil over _medium heat_ (http://recipecircus.com/recipes/marlaoh/STATErecipes/Wyoming_Baked_Beans.html) then reduce heat and simmer uncovered for 1 hour. Drain well then _preheat oven _ (http://recipecircus.com/recipes/marlaoh/STATErecipes/Wyoming_Baked_Beans.html) (http://recipecircus.com/recipes/marlaoh/STATErecipes/Wyoming_Baked_Beans.html) to 250 then place beans in casserole dish. Stir in onions, bacon, sugar, mustard, cayenne, molasses, vinegar, tomato juice and 1 cup water. Bake for 1 hour stirring occasionally.
