This makes a lot; you may want to cut it in  half.

NEW ORLEANS DOUGHNUTS

2 pkg.  yeast
1-1/2 c. warm water
1/2 c. sugar
1 tsp.  salt
2 eggs, beaten
1 c. canned cream, undiluted (Also  called, 'table cream.')
1/4 c. soft shortening, lard or  butter.
7 c. flour
Oil for frying
Confectioners  sugar

Dissolve yeast and sugar in warm water.
Add salt, eggs, milk,  shortening, and 4 cups of the flour.
Beat until smooth.
Add remaining  flour.
Cover and refrigerate several hours.
Roll dough out on a floured  board to 1/4 inch thick.
Cut into 2-1/2 inch squares.
Deep fry at 360  degrees for 2-3 minutes.
Drain on paper towels.
Sprinkle with  confectioners sugar.
Serve warm with coffee.
