Fried Rice

3 cups cooked long grain rice
2 T. soy sauce
1 T.  sugar
2 T. peanut oil
1/2 cup cooked diced chicken, roast pork or  shrimp
Salt to taste
1 bunch scallions, chopped
1/2 cup frozen green  peas, thawed
2 T. peanut oil
1 egg, lightly beaten

to cooked rice,  add soy sauce and sugar. Set aside. Heat oil; add meat, 
scallions, peas and  salt. Stir fry 2 to 3 minutes. Remove form pan and set 
aside. Add remaining oil  to pan and heat. Add rice and stir well. Add meat 
mixture and blend. Add lightly  beaten egg and continue cooking until brown. 
Serve at  once.
