Crock Pot Yummy Soup

1 lb. ground beef, browned and drained
2  cans (15 oz. ea.) diced tomatoes, undrained
2 carrots, peeled, sliced or  cubed
2 onions, diced cubed
2 potatoes, peeled and diced
2 cloves  garlic, minced
1 can (12 oz.) V-8 vegetable juice
1-1/2 cups celery,  sliced 
2 beef bouillon cubes
2 to 3 cups vegetables (cauliflower, peas,  corn, limas, or your
choice of leftovers from your freezer)

1. Combine  all ingredients in a crock pot/slow cooker.

2. Cover and cook on LOW heat  setting for 11 hours, or on HIGH heat 
setting for 4 to 6  hours.
