Ramen Noodle & Chicken Soup 1 cup Baby Carrots -- cut in 1/4" slices 1 cup Sliced Celery -- 1/4" thick 1 medium Onion -- chopped 2 cloves Garlic -- minced 2 cups Roasted Chicken -- (left-over or deli) 6 cups Water 3 ounces Ramen -- Chicken flavored noodles 1/4 teaspoon Salt 1/4 teaspoon Black Pepper 1 tablespoon Olive Oil
Using a Dutch oven, heat olive oil over medium heat and add carrots, celery, onion and garlic. Saute for 4-5 minutes, stirring frequently, until tender. Stir in chicken, water, seasoning packet from noodles, salt and pepper. Reduce heat to medium and simmer, uncovered, 10-15 minutes.
