POTATO PANCAKES

5 to 6 large russet  potatoes, well scrubbed
1 egg, beaten
1/2 cup flour
1/2 small yellow  onion, grated (or more to taste)
Salt and pepper to taste
Oil for  frying

Grate potatoes with their skins still on. Drain well.

Mix  potatoes with egg, flour, onion, salt and pepper.

Heat oil, about  1/4-inch deep, in a frying pan over medium heat. When hot, 
drop pancakes by  large spoonfuls into hot oil. Cook until well-browned, 
flip 
and cook until  browned on the other side.

Serve warm with sour cream or  applesauce.
