George And Lora's Sweetest Day Pork Peppers And Pineapple
(George And Lora Leggett 2009.10.17)

2 pork chops, bone removed and cut into small strips
1 medium or large green pepper, stem and seeds removed and  cut
 into strips
1 small onion, chopped
1 small can of pineapple chunks, reserve some juice from the can
soy sauce
honey
ginger
minced garlic
corn starch
water
salt and pepper to taste
butter
olive oil

Pour a small amount of olive oil into a frying pan.  Add a couple pieces of 
butter.  Warm it on medium heat until it starts to sizzle.
Add the pork and cook stirring occasionally to separate meat and cook evenly on 
all sides.
After about 8 minutes or so when the meat feels like it is getting done, add 
the pepper and chopped onion and mix it around to cook.
Add the pineapple chunks.
 Meanwhile, in a measuring cup, combine some soy sauce, honey, reserved 
pineapple juice, powdered ginger, minced garlic, salt, pepper, and water.
You may use fresh ginger and garlic or the powdered kind.  I used minced garlic 
in a spice bottle, and powdered ginger.
Add a little corn starch and mix it around to combine.
Bring the pan to high and pour in the liquid.  Mix it around as the pan comes 
near to a boil.
Reduce heat and cover it and let it bubble on medium covered for about 10 
minutes or more stirring occasionally.
It should thicken as it cooks on the stove.  Let it simmer a little while on 
very low.
Cut the heat and let it wait until it cools donw a bit.  Pour it into a large 
bowl.
I did not use exact measurements for the sauce ingredients, just guessed along 
the way.
