Hominy and Cheese Casserole

2 15 oz cans hominy, drained and rinsed
4 Tbs butter
1 1/2 cups shredded Gruyere or Cheddar cheese
Salt and freshly ground pepper to taste
1/2 cup heavy cream or half-and-half
1/2 cup bread crumbs

Place a layer of hominy in a greased baking dish, dot with butter, sprinkle 
with cheese, and season with salt and pepper. Repeat, ending with a layer of 
hominy. Add the cream and top with the bread crumbs. Bake in a preheated 
350ºF oven until the cheese is melted and the topping is golden brown, 20 to 
25 minutes. Serves 4 to 6.
