Athenian Macaroni

2 quarts water
1 T. salt
1 lb. macaroni or other pasta
Grated Parmesan cheese
1/4 lb. butter

Bring water to boil. Add salt, then add macaroni and stir and cook until 
tender, about 15 to 20 minutes. Drain well. Sprinkle layer of grated cheese 
on large

platter, cover with half the macaroni, sprinkle generously with grated 
cheese, cover with another layer of remaining macaroni, sprinkle again with 
grated

cheese. Melt butter in large skillet until it foams and turns golden brown, 
stirring so that it will not burn. Pour butter over macaroni and serve at 
once.
