CHERRY PINEAPPLE BARS 2 cups sifted flour 1 cup packed brown sugar 1/2 tsp. salt 1 cup butter or oleo 1/2 cup granulated sugar 2 tbsp. cornstarch 1 - 8-3/4 ounce can crushed pineapple 2 beaten egg yolks 1 cup chopped maraschino cherries Combine flour, brown sugar and salt. Cut in oleo until crumbly. Set aside 1 cup of mixture. Press remaining in bottom of a 13 x 9 x 2 pan. Bake at 350 degrees for 15 minutes. Cool while preparing topping. In saucepan, combine sugar and cornstarch. Stir in undrained pineapple and egg yolks. Cook over medium heat until thick and bubbling, stirring constantly. Remove from heat, stir in cherries. Spread over cooked layer. Sprinkle on remaining crumbs. Bake at 350 degrees for 30 minutes. Cool, cut into bars. Makes 2-1/2 dozen. These were made around Christmas due the red cherries. Enjoy.
