Peach French Toast

1 cup brown sugar
2 teaspoons water
12  slices day old French bread (3/4 inch thick)
1 1/2 cups milk
ground  cinnamon
1/2 cup oleo
1 can sliced peaches (drained) -- (29 oz)
5  eggs
1 teaspoon vanilla extract

Bring sugar, butter & water to  boil. Reduce heat & simmer 10 mins, stirring
often. Pour into a greased 9  x 13 pan, top with peaches. add the bread 
over the peaches. Whisk eggs,  milk
& vanilla together, slowly pour over bread. Cover & refrigerate  overnight.
Remove from refrig. 30 mins before baking. Sprinkle with cinnamon.  Cover &
bake 20 mins, uncover & bake 25-30 mins longer at 350  degrees. 6-8 
servings.
