Beany's Mashed Potatoes
Serves 6
6 medium size potatoes
1/2 cup half and half
3 tablespoons butter
1 teaspoon salt
1/2 teaspoon pepper
Peel the potatoes and cut them in to halves or quarters. Place them in a pot
containing enough boiling water to cover them and  simmer until done: drain.
Heat the half and half just to the boiling point and add the butter, salt
and pepper. Mash the potatoes with a potato masher or beat with an electric
mixer until all the lumps are out. Add the seasoned half and half and using
either the electric mixer  or wooden spoon  and elbow grease whip them until
they are creamy and light as a cloud. Johnny was the mashed potato beater at
the malones. It is a good idea not to add all the hot  milk mixture right at
the first some potatoes seem to require more liquid than others. You may not
need it all or  then you may have to add a little more. Taste for seasoning.
