Spicy Soy Sauce Fried Fish
Ingredients:
2 gloves       garlic, minced 
5            shallots, minced 
2 cm.     ginger, sliced 
5 pieces      fresh red chili, chopped 
1 tbsp.   salt 
1/2 tbsp.     each pepper, cumin
1/4 tbsp.     nutmeg powder 
3 tbsp.  soy paste 
2 tbsp.  sweet soy sauce 
3 cups   corn oil 
10 oz.    any white fish fillet, cut into portions 
Directions:
       Heat oil and add shallots, garlic, ginger and chili,
cooking until light brown.  When veggies look nice and cooked, add
fillet portions.  Next, add soy paste, salt, cumin, pepper and nutmeg
powder.  Fry until fish is done, approximately 5 minutes, and during
that time, mix well with the other ingredients.  Finally, add sweet
soy sauce, stir and you are done.  This tastes great with steamed rice
and steamed vegetables.
