TUSCAN BASS WITH SQUASH AND BEANS
1 tbs olive oil
1 cup sliced onion
12 oz zucchini and/or yellow squash
2 cloves garlic, sliced
19 oz can cannellini beans, rinsed and drained
8 oz can tomato sauce
1/2 cup water
1 1/2 tsp chopped rosemary
1/4 tsp pepper
4 striped bass, black cod or mahi mahi fish fillets
Heat 1 1/2 tsp oil in a skillet. Add onion, saute 3 min. Add squash,
saute 2
min. Add garlic, saute 1 min. or until fragrant. Add beans and next 4
ingredients, stir and bring to a boil. Reduce heat, place fish on top.
Cover and
simmer until fish is cooked through. On plates, top bean mixture with
fish,
drizzle with remaining oil and serve. MAKES 4 SERVINGS OF BASS, SQUASH,
&
BEANS.*
