Key Lime Cheesecake Pie" (Low carb)
Ingredients:
1.)  1-1/2 cups unsweetened coconut 
2.)  2 tablespoons butter, melted 
3.)  2 teaspoons Splenda 
4.)  1/2 teaspoon ground ginger 
5.)  1 teaspoon almond flavoring 
6.)  1/2 cup heavy whipping cream 
7.)  1 small package sugar-free lime Jell-O 
8.)  1/4 cup key lime juice 
9.)  1/2 cup boiling water 
10.)2 8-oz packages cream cheese, softened 
11.)1 lime, thinly sliced 
Preparation:
Melt butter in a small bowl. Add coconut, Splenda, ginger and almond
flavoring. Press in the bottom and up sides of a 9-inch pie pan.
Refrigerate until firm. In a small bowl whip the cream until peaks form.
Set aside. Pour boiling water into a tall mixing bowl. Add Jell-O and
stir until completely dissolved. Add lime juice and stir to mix. Add
cream cheese a little bit at a time, beating well with an electric mixer
at low speed. After all cream cheese is added, increase speed and beat
until smooth. Fold in reserved whipped cream. Spread into crust. Chill
at least 2 hours or until set. Garnish with lime twists. 
Yield:  Serves 6 to 8. 
Notes: The coconut goes great with the key limes.
