My mother used to make a cake like this when I was very little. They
called it poor man's cake. She got it from my grandmother's landlady, I

Eggless, Milkless, Butterless Cake Recipe
1 cup brown sugar, packed
1 cup water
1 cup raisins
2 tbsp. margarine or oil
1/2 tsp salt
1 1/2 cup sifted all-purpose flour
3/4 tsp soda
1/2 tsp ginger
1 tsp cinnamon
Cook together sugar, water, raisins, margarine and salt until raisins
puff up. Let cool. Sift together flour, soda, ginger and cinnamon. Stir
into the cooled cooked mixture. Mix well. Bake 1 hour at 350ºF in a
greased loaf pan. To make a delicious small fruit cake add:
1 cup of chopped dates
1 cup mixed peel
1/2 cup nuts
