Cod Mediterranean Style

4 (6-ounce) pieces Cod
Milk for dipping fish
Chopped fresh herbs, such as basil, thyme, chives and rosemary
Freshly ground black pepper to taste
2 cups Panko bread crumbs
3 tablespoons extra-virgin olive oil, plus 3 tablespoons for sauce
3 garlic cloves, chopped
1 (14-ounce) can low sodium crushed tomatoes
½ cup water
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh basil leaves

Dip both sides of fish in milk. Combine herbs with pepper and Panko
breadcrumbs in a bowl of a food processor and pulse to combine. Coat
fish in herbed crumb mixture, tapping off excess to create a light
coating.
In medium nonstick fry pan, heat 3 tablespoons olive oil over medium
heat. Cook fish until golden brown, about 3 minutes per side. Transfer
fish to plate.
Wipe out pan with a paper towel and heat remaining 3 tablespoons olive
oil over medium heat. Add garlic, tomatoes, water, parsley, basil and
freshly ground black pepper to taste and cook at a simmer for 10
minutes. Transfer fish to serving plates and top with sauce. Serve
immediately.
