Raisin Cream Pie

Ingredients

1 cup raisins
hot water
1 cup cream or whole milk
1 cup sugar
2 tablespoons flour
1/4 teaspoon cinnamon
grated rind of 1 lemon or 1/4 teaspoon lemon extract
2 eggs, separated
2 tablespoons powdered sugar
baked pie shell

Method

Cover raisins with hot water, stew till tender and thick. Drain, add cream
to raisins. Mix sugar, flour, cinnamon, grated lemon rind and add to
raisins.
Cook slowly for five minutes. Stir in beaten egg yolks and cook a few
minutes longer, till mixture is well thickened. Pour into baked pie shell.
Bake for
about 30 minutes in 325? F oven. Beat egg whites, adding powdered sugar
gradually. Remove pie from oven, top with meringue. Return to oven and bake
for
another 12 minutes or until meringue is golden and done.
