KATIE'S 7-WEEK BRAN MUFFINS
2 c. 40% bran flakes
2 c. boiling water
1 c. shortening
5 c. flour
1 1/2 c. raisins
1 c. apples, diced finely
4 c. bran buds
4 eggs
1 qt. buttermilk
1 tsp. salt
5 tsp. soda
2 1/2 c. sugar or 70 packets Sweet & Low
In large bowl, combine cereal and water. Mix well and let stand. In another 
bowl,
combine eggs, shortening, Sweet and Low or sugar and buttermilk. Mix well and 
add
to cereal mixture. Sift flour, soda and salt. Stir into bran mix. Add raisins 
and
apples. Fill greased muffin pan 2/3 full and bake at 375 degrees for 20 minutes.
Check for doneness and if necessary, cook for additional 5 minutes. Keep 
remaining
batter in refrigerator in well covered jar for up to 7 weeks.  Enjoy.
