JOSEPHINE'S PAN COOKIES
My grandmother, the daughter of Polish immigrants, grew up on a farm that was 
located
on the site where the telephone company building now stands on Club Road. She 
often
told me that she "graduated at the height of the depression, when you couldn't 
buy
a job". Probably due in part to their experiences during the depression my 
grandparents
were always very hardworking people. They also taught me the all important 
survival
skill of self denial. All the same my grandparents doted on their grandchildren 
emotionally
and Nana always had some wonderful new "goody" for us on Sundays or sleepovers. 
On
many a sleepover I would find myself up for a midnight snack. I would sit in the
rocking chair with my glass of milk and pan cookie and look out the picture 
window
through the milky glow of the street light to Rosebrooks' farm. I could hear the
train pass through town whistling "GO TO SLEEP, GO TO SLEEP". Sometimes now, I 
find
myself in my dining room with a midnight snack, and once again I can hear the 
whistle
of the train as it passes through town. Thank goodness for grandparents, 
Windham,
trains, and good cookies.
Here is just one of Nan's good, easy and quick cookie recipes: happy memories!
Cream together: 2 tbsp. butter 2 tbsp. butter 1/2 c. sugar 1/2 c. firmly packed 
brown
sugar
Cream well.
Blend in: 1/3 c. peanut butter 1/2 tsp. baking soda 1/4 tsp. salt 1/2 tsp. 
vanilla
Stir in: 1 c. quick cooking, rolled oats
Spread batter into a greased 13x9 pan. Bake at 350 for 20-25 minutes. Remove 
from
the oven and sprinkle one 6 ounce bag of semi-sweet chocolate morsels over the 
top
of the bars. Let stand 5 minutes and then spread the morsels as if they are 
frosting.
Cool before serving. YUM!  Enjoy.
