150 Year Old Oatmeal Cookies
Ingredients:
1 cup     sugar
3/4 cup       lard [ed:  use butter or margarine]
3            egg yolks
2 cups   flour
2 cups   old-fashioned oatmeal
1/2 cup       each raisins, walnuts, chopped
1 tsp.     each baking soda, cinnamon
3            eggs whites, well beaten
Directions:
       Heat oven to 350º F. (175º C).  Cream sugar and
lard.  Beat in egg yolks.  Add remaining ingredients except egg
whites and mix well.  This is a very stiff mixture, but do not
moisten.  Add egg whites and blend.  Drop by tsp. on ungreased
cookie sheet 2" apart. Bake at 350° F. about 13 minutes.  Makes
3-1/2 dozen cookies
