Cake Mix Cookies
Any flavor regular cake mix
8 ounce carton desert topping (such as Cool Whip), I use the house brand
1 egg
Blend together with spatula till all is smooth.  I tried using a mixer
but the recipe became very gummy and difficult to work with.
Drop by spoonful on cookie sheets sprayed with cooking spray.
Bake at 350F 17-20 minutes for chewy cookies
Bake at 350F 20-23 minutes for crisp cookies
Variations:
Chocolate cake mix, chocolate chips
French vanilla cake mix, toasted coconut
Lemon cake mix, poppy seeds
Spice cake mix, coarsely chopped dried fruit
CAKE MIX COOKIES - CHOCOLATE CHIP/PEANUT BUTTER
1 WHITE CAKE MIX
1/2 CUP PEANUT BUTTER
1/2 CUP SHORTENING
2 EGGS
2/3 CUP CHOCOLATE CHIPS
1/2 CUP SUGAR, SET ASIDE
PUT HALF THE CAKE MIX IN A BOWL, ADD PEANUT BUTTER, SHORTENING AND EGGS,
BEAT ON LOW 1 MINUTE THEN MEDIUM 2 MINUTES, ADD REST OF CAKE MIX AND
CHOCOLATE CHIPS AND STIR.  MAKE INTO 1 INCH BALLS, ROLL IN SUGAR AND
BAKE AT 375F FOR ABOUT 10-12 MINUTES UNTIL STARTING TO BROWN.  Enjoy.
