Butter Bean Casserole
6 slices bacon
1 / 3 - cup celery ( diced small )
1 / 2 - cup onion ( diced small )
1  clove garlic ( minced )
2  Tablespoons flour
1-1/4 - cup canned tomatoes
salt and pepper to taste
1  Tablespoons sugar
1  quart butter beans ( cooked and seasoned )
Fry bacon , drain and set aside . Reserve drippings and cook the celery
, onion , and garlic . Add flour , tomatoes ,salt , pepper , and sugar .
Cook slowly until flour browns slightly and begins to thicken . Add
butter beans that have cooked , seasoned, and drained . Simmer all
together before
putting in a casserole dish . Place bacon on top of casserole . Put in a
350 degrees oven for 10 minutes . Serve hot .
Serves 6 to 8 .
