Oh, now this omelet sounds awesome, and I want to try it! I was looking for 
more uses for the mugs I got, when wanting to make that mug chocolate cake. 
I did not like it, and it was discussed on one of the other lists, and you 
see so many variations, some used self rising flour, which I did, others 
said cake flour, others sent the recipe calling for plain all purpose flour. 
I did not think it tasted chocolaty enough, and it said cook three minutes, 
at that timing, and mine is 900 watts microwave, the cake was rubbery in 
parts, and yet, the actual recipe said cook on high three minutes for a 
1,000 watt microwave. I cut mine back then to two and a half minutes, and it 
was nice and moist at the ends, and rubbery in the middle. the receptionist 
at the vet clinic where I take my doggies also emailed me this cake recipe, 
so it has made the rounds. I told her to try it, and gave her my input, too; 
how many here have tried it?

I made it four different times. it seems to work best if you mix it right in 
the mug, and not in another bowl and pour it into the mug.
also works best if you use the wide bottomed mug, not the tapered ones. 
easier to mix in the wide bottomed mugs.
