FESTIVE FRUITCAKE 1 c. Pet evaporated milk 32 large marshmallows, finely cut or 4 c. miniature 6 Tbsp. orange juice or alcoholic flavoring 8 c. fine graham cracker crumbs (about 8 dozen 2 1/2-inch size), crushed 1/4 tsp. cloves 1/2 tsp. nutmeg 1/2 tsp. cinnamon 2 c. seedless raisins (1/2 golden and 1/2 dark are best) 1 c. finely cut dates 1 1/2 c. broken nuts 1 1/2 c. cut up mixed candied fruit
Put into 3 quart bowl Pet milk, marshmallows and orange juice or alcoholic flavoring. Into another larger bowl measure graham cracker crumbs, cloves, nutmeg, cinnamon, raisins, dates, nuts and candied fruit. Work in milk mixture with spoon, then with hands until crumbs are moist. You can make one large Festive Fruitcake by pressing mixture into a waxed paper lined angel food cake pan. If mixture becomes too crumbly to shape easily, add a few drops of Pet milk. Cover fruitcake tightly. Chill 2 days before serving. Makes 4 1/2 pounds.
