1-2-3-4 Cake With Caramel Icing

 

3 sticks butter, divided

2 cups sugar

3 cups all-purpose flour

4 eggs, well beaten

1 tablespoon baking powder

1 1/4 cups milk, divided

1 teaspoon vanilla

1 cup firmly packed dark brown sugar

2 cups powdered sugar, sifted

Preheat oven to 350 degrees. In bowl, combine 2 sticks butter and sugar. Beat 
with mixer until creamy. Add eggs, beat until smooth. In another bowl, combine 
flour and baking powder. Add alternately with 1 cup milk to butter mixture, 
beating until smooth. Add vanilla, beat until well blended. divide batter 
evenly among 3 greased and floured 9-inch round cake pans. Tap bottoms of pans 
to distribute batter evenly. Bake for 25 to 30 minutes, or until toothpick 
inserted into centers comes out clean. Cool completely. In saucepan, melt 1 
stick butter over low heat. Add brown sugar and 1/4 cup milk. Bring to a boil. 
Remove from heat to cool. Add powdered sugar, mix until well blended. When 
cakes are cooled, remove from pans. Place 1 layer onto cake plate. Spread 
one-third of icing over layer. Place second layer over icing. Spread with more 
icing. Top with third layer. Spread top and sides with icing.
