Ten ideas for quick and healthy meals

1. Keep pizza bases in the freezer. Top them with onions, red or
green peppers, fresh tomatoes or mushrooms. Go easy on the cheese.

2. A baked potato only takes a few minutes in the microwave. Same
with the broccoli to top it with. Can fry up some bacon ahead or bulk
sausage ahead and refridgerate. Top potato with cooked chicken, or
meat cheese, and nuke, for a good meal. Serve with salad, and your
set.

3. Add tuna or a few chopped pieces of ham or cooked chicken to a
prepared pasta salad.

4. Cooked pasta and rice both freeze very well. Cook up a large batch
of each over the weekend, and put into serving sized containers or
freezer bags to be plunged into boiling water to reheat quickly.

I sometimes make up a vegetable fried rice ahead, and freeze, that
can be pulled in the morning, and I can then add the meat of my
choice that evening to reheat quickly.

5. Frozen vegetables make a lovely accompaniment to oven-roasted
chicken. While this dish takes about an hour to cook, it only takes
about two minutes to put into the oven. Either do the chicken in the
crock, or roast the day before and reheat.

6. Get into a habit of cooking a larger quantity of food than you
need. Freeze half of it and microwave frozen meals when you have no
time to spend on food preparation. Vegetable soups freeze
particularly well and are also healthy.

7. Fresh chopped vegetables, like onions or peppers, make a lovely
accompaniment to quick-cooking rice. When you go to the store, it
only takes a small amount of time longer to remove everyting from its
bags and bias cut lots of veges to eat raw, or use to cook quickly or
stir fry. They are done and ready when you need them. To keep them
fresh, put into plastic bags and add a moist paper towel to the bag.
It'll keep them from drying out.

8. Fresh fruit, like bananas and apples, are quite filling and easy
to grab on the run and infinitely preferable to chocolates or chips.

9. Keep boiled eggs in the fridge. A small amount of mayonnaise can
be added to make egg sandwiches in a minute.

10. Fish fingers can be cooked in the microwave without having any
oil added to them. This takes about three minutes. If you like them
microwaved. I don't, but some do.
