Apple Cheddar Quesadillas
-
The use of apples and cinnamon make this into a
*Fall* type recipe that would go great for holiday
partys & family get-togethers.
1 lg or 2 sm apples
6 whole wheat tortillas
1-1/2 cups sharp cheddar cheese, shredded
2 Tbsp butter
Cinnamon (to taste)
-
Low Down:  Use a butter substitute, such as Smart
Balance & a Lite or No Fat version of the cheese..
=
1. Thinly slice apples into 24 1/4 " thick slices.
Sprinkle 2 Tbsp cheese over 1/2 of a tortilla.
Place 4 apple slices, barely overlapping, on
top of cheese. Lightly dust with cinnamon;
sprinkle 2 more Tbsp of cheese on top of
apples; fold tortilla in 1/2. Repeat with
remaining tortillas.   Heat 1 Tbsp butter in a
lg skillet over med-hi heat; cook 3 quesadillas
until cheese melts & tortillas are golden brown
on both sides, (abt 2 min per side). Repeat
with remaining butter tortillas.

Variation(s):  ~ This has also been made VERY
successfullly with brie cheese, & it*s amazing.  ~
Vary, or combine. different types and strengths
of cheese for a bigger variety of tastes from the
same base dish. that can be served together for
parties.  Use some form or *marking* on the outside
to allow you to identify the different one....or just
let it be a *surprise* for everyone.
