I find motivation comes easy after eating well before the ride! Start
the fish (salmon or tilapia) sautee in olive oil with onions & portabellos,
start the coffee, flip the fish and add fresh tomatoes and asparagus, prep
the strawberries, blue or blackberries and almonds, then load the plate
and the mug and open the Bible. Sustains my 9-mile commute and morning's
work, with steady blood sugar due to protein content and low
glycemic index. Type 1 diabetic for 40 years now, with insulin pump,
and this works really well! I have a blessing in knowing my blood sugar
and insulin load; for those who don't, a breakfast like that should work at
least as well as it does for me.
