One more remark: my 23 mm (22 mm actual on 19 mm outside rims) 650C Michelin Pro Race 3s also lay flat-as-a-ribbon after initial installation, and had the additional difficulty of being much narrower than the Parigi Roubaix. Still, using the technique I described, the tube went in and the beads went on on the first installation, and afterward they got easier -- still harder than the wider P-R.
I think that if you let them stretch, then try again, you will find that it's not that hard.
