How far do you want to ride? If you get off the train in Palo Alto, you can ride up to Skyline and wind through Castle Rock, Big Basin, and Henry Cowell state parks. It's about 50 miles and should be relatively uncrowded. Lots of trees and shade, so it can get cool but quite scenic.
