Dave is right, Ft Collins has some great riding. We have a few fun trails here on the West Slope of Colorado http://www.gjmountainbiking.com/ If you are driving through Utah on I-70, there are many many opportunities. Of course there is the Moab area, but closer to the Interstate is the San Rafael Swell http://www.utah.com/bike/trails/temple_mtn.htm including unique hiking opportunities in Goblin Valley State Park.
