A low profile cyclocross tire, something not super-fat, like a 32mm works well in mixed terrain. Rather than floating over loose surface like a fat tire would, the narrow tires sink into it and give solid traction. I've had excellent luck with the Challenge Grifo XS tires - the low profile tread grips well and they VERY speedy when mixed terrain returns to pavement. These feel quite cushy for 32mm tire - worth the $$$ IMO. Ritchey Speedmax cross tires are nice for trails too but are not quite as quick on pavement.
That said, smooth pedaling and good body position are at least as important are important too.
