Guys that tour on uni's don't usually carry their own luggage. Not saying some don't but 2 good friends have toured the Swiss Alps, Tasmania, Africa, India, 1 of them is actually in Mongolia now with a touring group and they haven't carried anything but maybe a camelback. these guys ride 36in schumpf hubs (2 geared high/low hub) with mountain tread tyres and are amazing to watch. I can't imagine the core strength it must take to ride/tour on one of those things.
These guys have done the mt diablo challenge (http://tinyurl.com/ 3x8zs8) a few times and when those guys are climbing they are pretty fast, they pass lots of bikes on the uphill.
