I agree with Bill about the Bombadil (and by extension, Hunq presumably) being optimal for loaded touring on mostly pavement. Mine's been this the past few years both with drops and flat bars, and as long as it's not too much off-road I have been totally happy with it. For trails, I prefer disc brakes and a little more tire clearance, though I also really enjoy it set up as an elevated 90s MTB: no racks, no fenders, and 2.2" knobby tires. It's just a bit heavier than it needs to be for this job, but at least you don't have to worry about whether it'll take the abuse of a chunky rocky descent.
I'm actually building up a "Bombadil replacement" in a month or so, but will not be selling the Bombadil unless I decide I don't need it after a year in storage. So check back in July 2027! The replacement will be a Stooge Rambler: bigger tire clearances, disc brakes, a little more slacked out. Frame is 200g lighter than the Bombadil but the fork is 400g heavier.
