I will second the vote for GK Slicks with two caveats. I ran 700x38mm
slicks on my commuter and they lasted about 6 months (~2500 miles). While
they lasted, they were fantastic but they did wear a bit quickly (not
unexpected for this tire, just good to know) and I would not run them with
tubes (they are prone to pin-hole punctures). You could probably get about
3000 miles out of the rear tire and likely 4000-5000 out of the front tire
if you rotate it to the back when replacing the rear. As the rear tire gets
thinner in the middle it becomes more and more prone to pin-hole punctures
and begins to seal less reliably.

I run my commuter tubeless due to the myriad of small hazards that come
with riding in the city and I tend to prioritize how well a tire seals over
most other factors and found that the GKs generally seal the best of any
tire I've used when used with Orange Seal sealant.

All that said, I wanted to also throw out there another recommendation. I
recently swapped from 700x38 GK Slicks to 700x45 GK SS tires. I believe the
SS feel like they roll _somewhat_ slower than the slicks but since I also
went from 38mm to 45mm it could easily just be that or even just a
perception due to the added volume.
