Running exceptionally wide rims on a bike with narrow cantilever posts
along with brakes that don't offer much width-adjustability is kind of
designed to end up like this. Is this a new build where you kind of
guessed because the parts are all "really good" only to find they don't
really fit together optimally?

Regardless of how you got here, one suggestion would be to measure the
actual thinness of your Thinline brake pads. What is the distance from the
surface of the brake pad to the surface of the Motolite brake that the
brake pad spacer registers against. What is that distance? On road-type
holders with inserts that distance is about 15mm. If your Thinline brake
pads are substantially thicker than 15mm in that dimension, then swapping
out to road holder style brake pads might get you a little bit of angle
correction.
