I haven't used V brakes much, but every bike I've tried that had V
brakes had zero modulation, purely binary like a light switch: all on or
all off. YMMV, but for me, simply no way. Never in life.

There are no centerpulls that would fit onto V-brake brazed-on
posts. While there is a centerpull that uses canti posts (which V
brakes also do) the posts would be positioned all wrong. The
choice would be between V brakes and cantilevers, since a frame
equipped with brazed on posts suitable for the one would also be
suitable for the other.
Of course, you are right about V brake ugliness and crowding tall
tires and fenders. You could also mention V brake hair-trigger
lack of modulation and incompatibility with road brake levers as cons.
