Speaking only for one particular 8 speed cassette: Shimano discontinued the XTR M900 8 speed 12-32 cassette at least 10 years ago.  A couple of years ago, I noticed SunRace had reintroduced a 12-32.  I've got one.

The model is CSM66.   It's not as nice as the old XTR, not made on a spider but rather has full sized rings riveted (I think) together, and possibly it may not shift quite as smoothly as the old XTR, but it's available, it's fairly inexpensive, and it can easily be converted to a 13-32.  There's also a 12-34.   (There are also a bunch that start with 11 - I dislike cassettes that start with 11, except for the 11-28 I have on my Moulton AM and so don't pay much attention to them.)

I think it's a sweeping over-generalization to say "going extinct."
