Patrick, I built up a Surly Krampus with 29x3" tires last spring and pretty much rode it exclusively in 2018. I love the big wheels. I have also ridden a few Santa Cruz full suspension mountain bikes at demo events with 27.5x2.8" tires. The rolloverability (not a word, but I think you get my meaning) of the 29+ wheels is noticeable and much preferred in my opinion. As expected, the bigger wheels are heavier, have greater momentum (both good and bad), and for lack of a better word, more "stability". My Krampus will fit 29x3.25" tires, and I am seriously considering going up to that size.
Now, these are "motorless motorycles" as Grant Petersen describes modern mountain bikes. That's OK by me, I like motorcycles, too. My use case is riding around in circles on tough single track, not bikepacking. I think that the benefits of 29+ would still apply to a GBW and bikepacking, though.
