I rode the whole thing (including some of the singletrack options) a couple of years ago and loved it. I'm sure you could do the smaller southern loop in the time frame you suggested. Although it's promoted as a mountain bike route, it's actually more of a dirt road route and I'm sure your Cheviot would be up to the task. Plenty of climbing, but also plenty of opportunities to soak those sore muscles! Cheers, Kurt G.
