I've been attempting to follow EBDJ for about the same amount of time as you. Initially, I was expecting some muscle weakness or decrease in energy especially on longer (3 - 4 hr rt's) rides. It just hasn't been a factor, and I'm not hungry for food during the ride. I have lost over 10 pounds in this time. I am trying not to over think what's going on physically, and just apply these new things into my routine.
