You're going to find it varies from bike to bike with different riding positions. The more roady drop-bar the bike, the straighter you're going to be above the pedals, and the higher your saddle will be. The more upright the bike, the farther forward you need your knees, which means greater rear offset and shorter saddle height. No matter your starting point, trial and error (in the positive sense) is going to fine-tune it.
