Hey Ben, Unless you are really tall with ultra broad shoulders, the Leather bar is a bit much. It's also not heat treated, so it's a big flexy bar that's not safe for off road riding! All that said, a set of Woodchippers would be great on the SG, with a 0mm stem. The bike has a long TT, and this would work really well. The threadless stems are maybe 2 months out, so not too far.
I put a leather bar on my Hunq, with a super short stem, and took it off after one ride. It was great on the tops, but the hoods were insanely far apart, and it was shoulder pain city! Holler about any of the stems you might want! I just posted a reply to Stephen about the quill options, so check that out when you get a chance.
