Green beans keep at least 4-6 months like Patrick says.
They will gradually lose some of their fruity and spicy undertones and nuances
over time and you will be left with really smooth and delicious coffee.
Some island grown beans are actually aged for a couple years before they are
sold.
....and when you have a few different varieties left and not enough of any of
them to make a full batch, mix them and roast them.
As long as you start with good coffee the results will be outstanding.
A blindfolded chimp could make a stellar blend, keep that in mind whenever you
read flowery prose in a coffee shop. The blindfolded chimp would get just as
good of results as any meticulously careful roaster.
Trust me, I’m that chimp and every random blend I have ever made was
outstanding
